Firstly, we take our owned and grown garlic from our farms in Hillston, NSW. Then, we treat these delicious bulbs with low heat and humidity for several weeks, until the cloves turn inky black and develop a caramelised, balsamic-like flavour that’s packed full of umami. Yum.

From our bulbs to your bowls, all Hillston Black Garlic products are made from our very own garlic. Grown in Hillston, NSW — where the climate is warm the soil is rich — we produced 150 hectares of freshly flavoursome garlic per year. Which means this gourmet ingredient is always in season, for all your seasoning needs.
